A very simple Italian family staple with infinite possibilities.
4 eggs
1 – 2 tablespoon milk
Salt and pepper
1 teaspoon olive oil
Then add in to the recipe whatever you’d like – this time I used spring onions, a yellow pepper, a courgette and a handful of spinach leaves
25g cheddar cheese, grated
Method
Beat the eggs and milk together in a bowl with a fork and season with salt and pepper.
In a frying pan fry the vegetables in the olive oil for 5 – 10 minutes. I usually add the spinach in right at the end of this cooking time. Turn down the heat and pour in the eggs and cook gently until almost set and brown underneath. Sprinkle with the cheese and place under a hot grill until browned. Serve cut into wedges.
Other ideas – bacon or chorizo is a great addition.
