Add in your favourite fruits and nuts and keep the sugar content much lower than commercial products

350g oats

60g butter

40g maple syrup – easier to weigh than measure!

100g nuts – eg almonds, cashews, brazil, pumpkin seeds – roughly chopped

150g dried fruit – eg cranberries, dates, apricots – roughly chopped

 

Method

Preheat the oven to Gas Mark 6/Fan 180°C/200°C

Melt the butter and maple syrup together in a small jug in the microwave until just melted. Place the oats in a large bowl. Pour in the butter and maple syrup mixture and stir well to mix. Spread the oats onto a flat baking tray or two and bake in the oven for 5 minutes. Remove from the oven and stir in the nuts. Return to the oven for a further 5 minutes. Remove again from the oven and stir in the dried fruit. Bake for a final 5 minutes and then remove fro the oven and cool.

When cool store in a sealed jar.

Breakfast: Serve 1 tablespoon sprinkled over natural yoghurt and add fresh fruit.
